Kalua Pig Lettuce Wraps

Here’s a crowd pleasing recipe that you can make slow or fast(er) using your crock pot or Instant pot (pressure cooker).

Kalua Pig on Lettuce Wraps

6-7lb pork shoulder
2 TBS salt
3 TBS smoked paprika
1 c water

Lettuce, washed & patted dry

Sauce:
¼ c gluten free teriyaki
¼ c gluten free soy sauce
2-3 Tbs red chili paste
1 Tbs sesame oil
3 Tbs avocado or olive oil

Garnish:
¼ cup peanuts, diced
½ head cilantro, washed

Set Instant Pot to sauté, add oil and heat. Once oil is hot brown all sides of the roast. Once browned, sprinkle with salt and paprika, add the water to the bottom of the pot and set to high pressure with 105 minutes on the timer. Once the timer is done, allow it to cool naturally (natural release) for approx. 20 minutes. Release pressure.

Remove meat to large bowl, shred with two forks, throwing away any fatty pieces. Empty instant pot of juices and return meat to Instant Pot and set to “keep warm” until ready to serve. Serve with lettuce boats, chopped nuts and cilantro, drizzle small amount of sauce over the top.

Traditional Kalua pig takes all day in an imu, 12+ hours in a crock pot, or 2 hours in the instant pot.
